Brie and Ham Bruschetta

  • 2 tbsp olive oil
  • 2 chopped shallots
  • 125ml heavy cream
  • small bunch snipped chives
  • 4 thick slices ciabatta or similar
  • 2 sliced heritage tomatoes
  • 12 slices brie
  • 4 slices Serrano ham
  • Peppery leaves, to serve
  • Heat a teaspoon of oil in a saucepan and cook the shallots for 2 mins to soften. Pour in the cream and simmer until reduced by half, then stir in the chives and some seasoning.
  • Heat the grill to high. Brush the remaining oil over the bread and grill on both sides, then top each slice with a bit of tomato, some of the brie, then the ham and finally a tbsp of the cream sauce. Place back under the grill and cook for 5 mins - you want the cream coloured slightly and the cheese bubbling. Serve with a scattering of peppery salad leaves.
