Brisket and Blue Cheese Burgers

  • 1.2kg unrolled brisket
  • 1 sliced onion
  • 2 sliced carrots
  • 900ml brown ale
  • 2 bay leaves
  • 4 thyme sprigs
  • 6 crusty bread rolls
  • 150g blue cheese, such as dolcelatte
  • Preheat the oven to 160C. Season the brisket well and place the onion and carrot slices in a roasting tray with the brisket nestled in the middle. Pour over the beer, add 1.5 litres of water to just cover the meat, and add the bay leaves and thyme. Cover with foil and cook for 4 hours.
  • Carefully remove the meat from the tray and leave to rest, covered in foil. Split the bread rolls and butter each side, then place the cut side on a hot frying pan to toast. Slice the brisket and stuff into the rolls, spooning in some of the sauce and onions, and top with plenty of blue cheese. Perfect!
