Broccoli and Green Bean Noodles

  • 2 nests of rice noodles
  • 200g green beans or other green veg, cut into 3cm lengths
  • 10g grated ginger
  • 1 tbsp soy sauce
  • 2 tbsp sesame oil
  • ½ tbsp white wine vinegar
  • 1 tsp honey
  • 2 tbsp peanut butter
  • Pinch of chilli flakes
  • Handful of chopped coriander
  • Handful of toasted peanuts, chopped
  • Cook the noodles according to pack instructions, then drain and refresh in cold water. Steam the beans for 3 mins or until tender. Meanwhile, stir the ginger, soy sauce, oil, vinegar, peanut butter, honey and chilli flakes in a bowl.
  • Stir the beans and drained noodles into the bowl with the sauce, and toss through the chopped coriander. Divide between bowls, scatter with toasted nuts and serve immediately.
