Broccoli and Green Bean Noodles
- 2 nests of rice noodles
- 200g green beans or other green veg, cut into 3cm lengths
- 10g grated ginger
- 1 tbsp soy sauce
- 2 tbsp sesame oil
- ½ tbsp white wine vinegar
- 1 tsp honey
- 2 tbsp peanut butter
- Pinch of chilli flakes
- Handful of chopped coriander
- Handful of toasted peanuts, chopped
- Cook the noodles according to pack instructions, then drain and refresh in cold water. Steam the beans for 3 mins or until tender. Meanwhile, stir the ginger, soy sauce, oil, vinegar, peanut butter, honey and chilli flakes in a bowl.
- Stir the beans and drained noodles into the bowl with the sauce, and toss through the chopped coriander. Divide between bowls, scatter with toasted nuts and serve immediately.
