Broccoli and Sage Pasta
- 150g spaghetti
- 150g long-stem broccoli, cut into 5cm lengths
- 3 tbsp olive oil
- 2 sliced shallots
- 1 chopped garlic clove
- ¼ tsp chilli flakes
- 12 shredded sage leaves
- Grated parmesan, to serve
- Boil the pasta in salted water for 3 min, then add the broccoli for 4 mins more. Meanwhile, heat a frying pan and add the oil, shallots, and garlic. Gently cook for 5 mins, then add the chilli flakes and sage and cook for 2 mins more. Drain the pasta and broccoli, mix with the shallot mixture in the pan, and scatter with parmesan and seasoning to serve.
