Broccoli and Sage Pasta

  • 150g spaghetti
  • 150g long-stem broccoli, cut into 5cm lengths
  • 3 tbsp olive oil
  • 2 sliced shallots
  • 1 chopped garlic clove
  • ¼ tsp chilli flakes
  • 12 shredded sage leaves
  • Grated parmesan, to serve
  • Boil the pasta in salted water for 3 min, then add the broccoli for 4 mins more. Meanwhile, heat a frying pan and add the oil, shallots, and garlic. Gently cook for 5 mins, then add the chilli flakes and sage and cook for 2 mins more. Drain the pasta and broccoli, mix with the shallot mixture in the pan, and scatter with parmesan and seasoning to serve.
