Broccoli and Walnut Pasta

  • 1 head of broccoli, cut into florets and stalk chopped
  • 3 tsp olive oil
  • 150g fusilli pasta
  • 2 crushed garlic cloves
  • 1 tbsp chopped walnuts
  • Pinch of chilli flakes
  • ½ lemon, zest and juice
  • Preheat the grill. Place the broccoli pieces on a baking tray and drizzle with 1 tsp of oil and seasoning. Toss well, then grill for 10 mins or until crispy and charred. Cook the pasta in salted water until al dente. Drain and reserve a splash or two of cooking water.
  • Heat the remaining oil in a pan and fry the chilli, walnuts and garlic for 3 mins. Tip in the pasta, lemon zest and juice and broccoli, add a splash of cooking water and toss to combine. Serve with some more lemon zest and black pepper sprinkled over the top.
