Bruschetta with Mozzarella and Rocket Drizzle

  • 12 slices of ciabatta, toasted
  • 1 garlic clove
  • 25g rocket leaves
  • 1 tbsp toasted almond flakes
  • 1 red chilli, deseeded and chopped
  • 2 tbsp olive oil
  • ½ lemon, juice only
  • 375g quality mozzarella, torn
  • Whizz the rocket, almonds, garlic and chilli in a blender to form a coarse paste. Add the oil and lemon juice, then whizz again with a few splashes of water to make a dressing. Season well.
  • Top the ciabatta toasts with mozzarella, and drizzle over the rocket dressing. Serve immediately.
