Buffalo Kebabs

  • 1 tbsp veg oil
  • 1 tsp mustard powder
  • 1 red onion, chopped
  • 2 star anise
  • 4 chopped plums
  • 1 cinnamon stick
  • 1 red chilli, halved lengthways
  • 2 tbsp vinegar
  • 50g sugar
  • 800g sirloin, thinly sliced into strips
  • Preheat your barbecue. Make the marinade by heating the oil in a pan, and softening the onion for about 5 minutes. Add the rest of the ingredients, minus the meat, and slowly simmer for 10 mins to soften the plums. Set aside about 1⁄4 of the marinade and allow to cool, and pour the rest in a serving bowl.
  • When the smaller amount of marinade has cooled, pour all over the raw meat and mix well, before leaving to rest for about 20 mins. Thread the marinated meat onto skewers, and cook for 2 mins on each side. Serve with the rest of the marinade, flatbreads, and any sides and relishes you fancy.
