Burnt Butter Oysters

  • 8 live oysters
  • 40g butter
  • Hot sauce
  • ½ lemon
  • Nestle the oysters in the embers of a barbecue or fire pit for about 10 mins, until then pop open (or can be opened with a knife). Meanwhile, melt the butter in a small frying pan and cook for 3 mins, or until it turns golden and nutty. Add a few drops of hot sauce and a squeeze of lemon juice, then swirl to combine.
  • Discard the top part of the oyster shells, and place the meaty half on a platter. Drizzle with burnt butter, and serve immediately - divine!
