Butter Bean and Tomato Salad

  • 400g tin of butter beans, drained
  • 500g cherry tomatoes, quartered
  • 2 yellow courgettes, diced
  • 1 red onion, chopped
  • 20g chopped coriander
  • 2 tbsp lemon juice
  • 3 tbsp olive oil
  • 1 tsp cumin, ground
  • Simply tip all of the ingredients into a salad bowl, season well with salt and pepper, and give it a good mix to bruise the tomatoes a little. Serve at room temperature with crusty bread.
