Cajun Chicken and Quinoa

  • 10g coconut oil
  • 80g red and green pepper strips
  • 300g chicken breast, sliced into 1cm strips
  • ½ tsp Cajun seasoning
  • 250g cooked quinoa
  • 1 lemon, juice and zest
  • Pinch of nutmeg
  • 1 chopped spring onion
  • Small pack of coriander, chopped
  • Melt the oil in a wok, and stir-fry the peppers for 4 mins to soften. Chuck in the seasoned chicken and Cajun seasoning. Fry for 3 mins more, until the chicken is cooked through.
  • Stir all of the remaining ingredients into the cooked quinoa, then pile on a plate and top with the spiced chicken and peppers.
