Cajun Chicken and Quinoa
- 10g coconut oil
- 80g red and green pepper strips
- 300g chicken breast, sliced into 1cm strips
- ½ tsp Cajun seasoning
- 250g cooked quinoa
- 1 lemon, juice and zest
- Pinch of nutmeg
- 1 chopped spring onion
- Small pack of coriander, chopped
- Melt the oil in a wok, and stir-fry the peppers for 4 mins to soften. Chuck in the seasoned chicken and Cajun seasoning. Fry for 3 mins more, until the chicken is cooked through.
- Stir all of the remaining ingredients into the cooked quinoa, then pile on a plate and top with the spiced chicken and peppers.
