Cajun Jambalaya Feast

  • 8 tbsp olive oil
  • 1 onion, chopped
  • 3 bell peppers, any colour, chopped
  • 2 tbsp garlic, crushed
  • 4 chorizo sausages, chopped
  • 450g chicken pieces
  • 2 hot chillies, chopped
  • 500g rice
  • 1 tsp chilli powder
  • 2 tbsp turmeric
  • 2 tbsp Cajun spice mix
  • 1 litre chicken stock
  • Large handful of mixed veg (carrots, peas, zucchinis, etc)
  • 450g prawns
  • Salt and pepper
  • Heat up the olive oil in a large pan, and add the onion, mixed bell peppers, garlic, chicken pieces, and chorizo. Cook for 10 mins. Add the chillies to taste, then add the rice and stir well.
  • Add the spices and mix the rice well, so it’s completely coated. Pour in the stock, simmer, add the mixed veggies, and simmer again for about 5 minutes. Once the rice is tender and almost cooked, add the shellfish, and simmer for 35 minutes. Season well, and serve.
