Cajun Salmon
- 2 salmon fillets, about 140g each
- Juice of 1 lime
- Pinch of chilli powder
- 1⁄2 tsp ground cumin
- 1⁄2 tsp smoked paprika
- 1⁄2 tsp ground coriander
- Pinch of soft brown sugar
- Some sunflower oil
- Steamed rice to serve
- Salsa, to serve
- Put the fish in a bowl, and pour over the lime juice. Leave to ‘cure’ in the citrus juice for 5 minutes. While you wait, mix the spices with the sugar, and then take the fish out of the lime juice and roll in your spice mix.
- Heat a grill or griddle pan to high, then cook on a high heat for five minutes for five minutes or until it starts to blacken. Serve with salsa, rice, and whatever salads you fancy.
