Cajun Salmon

  • 2 salmon fillets, about 140g each
  • Juice of 1 lime
  • Pinch of chilli powder
  • 1⁄2 tsp ground cumin
  • 1⁄2 tsp smoked paprika
  • 1⁄2 tsp ground coriander
  • Pinch of soft brown sugar
  • Some sunflower oil
  • Steamed rice to serve
  • Salsa, to serve
  • Put the fish in a bowl, and pour over the lime juice. Leave to ‘cure’ in the citrus juice for 5 minutes. While you wait, mix the spices with the sugar, and then take the fish out of the lime juice and roll in your spice mix.
  • Heat a grill or griddle pan to high, then cook on a high heat for five minutes for five minutes or until it starts to blacken. Serve with salsa, rice, and whatever salads you fancy.
