Cajun Sea Bass with Chilli Rice

  • 150g basmati rice
  • 1 tbsp veg oil
  • 1 red chilli, chopped
  • 2 tbsp chopped parsley
  • 1 tbsp soy sauce
  • 1 sea bass fillet
  • 1 tbsp olive oil
  • 1⁄4 tsp cayenne pepper
  • 1 tbsp soy sauce
  • Preheat the oven to 190C. Make the chilli rice by cooking the rice according to pack instructions, and draining. Fry the chilli for 1 minute in the oil, then chuck in the rice, parsley, and soy sauce and cook for another minute or two. Remove from the heat and set aside.
  • Place the sea bass fillet onto a baking sheet, drizzle with oil and season with cayenne pepper and soy sauce. Bake for 8 minutes or until cooked through. Serve the fillet on a bed of rice, topped with mixed herbs and a drizzle of oil.
