Cajun Steak and Salsa
- 1kg desiree potatoes or similar, cut into wedges
- 15ml olive oil
- 1 tbsp Cajun spice mix
- 4 sirloin or ribeye steaks
- 50ml chipotle sauce
- 200g sweetcorn
- 150g cherry tomatoes, quartered
- 1 chopped avocado
- ½ red onion, sliced
- 2 tbsp chopped coriander
- 1 chilli, deseeded and chopped
- 1 lime, zest and juice
- Preheat the oven to 200C. Toss the potatoes in the oil and Cajun spices and mix well, then roast in a tin for 30 mins until crisp and golden. Rub the steaks with the chipotle paste and set aside for 20 mins to marinate.
- Mix the corn, tomatoes, onion, avocado, coriander and chilli in a bowl, then stir in the lime zest and juice. Season well. Cook the steaks on a hot barbecue for 3-4 mins on each side, or to your liking. Leave to rest for 5 mins, then serve with a big dollop of your salsa. Delicious!
