Caprese Tofu

  • 400g tofu, drained well and cut into 1cm slices
  • 1 lemon, zest and juice
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 3 tbsp pine nuts, toasted
  • 4 sliced tomatoes
  • 2 sliced avocados
  • 2 tsp balsamic vinegar
  • Torn basil leaves
  • Mix the tofu slices with the lemon zest and juice, half the oil and the oregano in a shallow dish. Season and turn to coat with the marinade, then leave to marinate for 1 hour, basting occasionally. When ready, fry in the remaining oil for 7 mins, turning once until golden.
  • Arrange the fried tofu on a serving platter with the sliced avocados and tomatoes. Drizzle with olive oil and balsamic vinegar, and season to taste. Scatter with basil and pine nuts, and serve.
