Capsicum and Chickpea Burgers
- 2 tbsp olive oil
- 1 finely chopped onion
- 1 finely chopped garlic clove
- 40g peppery leaves
- 250g roasted red capsicums from a jar, drained
- 400g tin of chickpeas, drained
- 15g chopped parsley
- 200g fresh breadcrumbs
- Buns, sauces and salads to serve
- Heat 1 tbsp of oil in a pan and cook the onion until softened. Add the garlic and the leaves and cook for 2 mins more. Place the capsicums and chickpeas in a food processor with the onion mixture, breadcrumbs, parsley and plenty of seasoning. Whizz to combine, then shape into 4 patties and chill in the fridge for 15 mins.
- Heat the remaining oil and fry the burgers for 5 mins on each side, or until golden and crisp. Stuff into buns with all your favourite additions and enjoy!
