Caramelised Lemon Prawns

  • 2 tbsp olive oil
  • 1 thinly sliced lemon
  • 1 tsp sugar
  • 2 chopped garlic cloves
  • 1 tsp chilli flakes
  • 180g peeled king prawns
  • Tahini and yoghurt dip, to serve
  • Heat the oil in a large frying pan and add the lemon slices in a single layer. Cook for 5 mins, then sprinkle in the sugar and cook for 3 mins more, or until sticky and caramelised.
  • Stir in the prawns, chilli, garlic and some seasoning, and cook for 3 mins or until the prawns are pink and cooked through. Serve with a dollop of tahini yoghurt and with toasted pita - perfect!
