Caribbean-Style Snapper
- For the Seasoning
- 1 tsp salt
- 2 crushed garlic cloves
- 1 tbsp crushed allspice berries
- 1 tbsp crushed black pepper
- 3 bay leaves
- 1 tbsp chilli sauce
- 1 tbsp dark soy
- Salt and pepper
- For the Fish
- 1 onion, chopped
- 1 red and 1 green capsicum, chopped
- 2 sliced garlic cloves
- 2 snapper (or bream), cleaned and gutted
- Drizzle of oil
- Preheat the oven to 190C and mix all of the seasoning ingredients in a bowl. Chop the onion, capsicums, and garlic, and arrange in the base of an ovenproof dish.
- Place the dish on top of the veggies, and sprinkle generously with the seasoning. Drizzle with oil, and cook for 20-30 minutes, or until the fish is cooked through and the vegetables are tender. Serve at once with flatbreads or rice.
