Cauliflower and Blue Cheese Gratin
- 1 small cauliflower, cut into florets
- 50ml double cream
- 50g gorgonzola or other blue cheese
- 1 egg yolk
- Salt and pepper
- Preheat the oven to 220C. Simmer the cauliflower florets in boiling water for 3-4 minutes, then drain and chuck into an ovenproof dish.
- Pour the cream over the cauli, then crumble over the cheese. Make a well in the centre and place the egg yolk in the well, season liberally with salt and lots and pepper, and cook for 8 minutes. Serve bubbling and hot.
