Cauliflower and Blue Cheese Gratin

  • 1 small cauliflower, cut into florets
  • 50ml double cream
  • 50g gorgonzola or other blue cheese
  • 1 egg yolk
  • Salt and pepper
  • Preheat the oven to 220C. Simmer the cauliflower florets in boiling water for 3-4 minutes, then drain and chuck into an ovenproof dish.
  • Pour the cream over the cauli, then crumble over the cheese. Make a well in the centre and place the egg yolk in the well, season liberally with salt and lots and pepper, and cook for 8 minutes. Serve bubbling and hot.
