Cauliflower and Cashew Roast
- 1 large cauliflower, broken into florets
- 1 lime, zest and juice
- 2 cloves of garlic, chopped
- 1 tbsp olive oil
- 100g cashews
- Salt and pepper
- 25g parmesan
- Preheat the oven to 180C. Boil a saucepan of water and add the cauliflower, blanch for 3 minutes, then drain. Meanwhile, mix the lime with garlic and oil, pop the cauliflower and cashews in a roasting tin and pour over the lime and garlic mix, toss to combine, and season well.
- Roast for 10 minutes, then sprinkle over the cheese. Roast for another 10-15 mins, until the nuts and the cauliflower are golden. Serve.
