Cauliflower and Halloumi Pilaf
- 500g cauliflower, broken into florets
- 150g spinach leaves
- 1 tbsp olive oil
- 1 sliced red onion
- 120g cubed halloumi
- 1 crushed garlic clove
- Thumb-sized piece of ginger, grated
- 1 tsp turmeric
- 1 tbsp curry powder
- 500g brown basmati rice, cooked
- 1 sliced red chilli
- Cook the cauliflower in boiling salted water for 5 mins, adding the spinach leaves to the pan for the final 2 mins. Drain well and set aside.
- Heat the oil in a frying pan and fry the onion for 5 mins. Add the halloumi, cook for 5 mins more, then tip in the garlic, turmeric, curry powder and ginger. Cook for 1 minute, then stir through the cooked rice, cauliflower and spinach. Season well, scatter with chilli, and serve.
