Cauliflower Cheese Spaghetti

  • 1 cauliflower, cut into florets
  • 2 tbsp olive oil
  • 300g spaghetti
  • 1 tsp ground black pepper
  • 1 crushed garlic clove
  • 120g grated Grana Padano
  • Preheat the grill to high. Toss the cauliflower pieces in a tray with 1 tbsp of oil and some seasoning, then grill for 20 mins, stirring halfway through, until golden and tender. Add the cauliflower leaves to the tray and grill for 5 mins or until crisp. Meanwhile, cook the spaghetti until al dente, then drain and reserve 250ml of the cooking water.
  • Heat the remaining oil in a frying pan and fry the garlic and pepper for about 1 minute. Toss in the cooked spaghetti, 150ml of pasta water and a pinch of salt, then reduce the heat and add almost all the cheese. Wait 1 minute, then stir in 50ml of pasta water to make a glossy sauce. Add the cauliflower, season to taste and sprinkle with the remaining cheese to serve.
