Cauliflower Salad with Walnuts and Apple

  • 1 cauliflower, cut into small florets
  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp Dijon mustard
  • 2 apples, cored and cubed
  • Handful of raisins
  • Bunch of parsley, chopped
  • Chopped walnuts
  • Whisk the oil, vinegar and mustard together with some seasoning in a large bowl. Add the apples, parsley, cauliflower and raisins, and gently toss together. Toast the walnut pieces. Tip the salad into a serving bowl, scatter the walnuts over the top and serve.
