Cauliflower Salad with Walnuts and Apple
- 1 cauliflower, cut into small florets
- 3 tbsp olive oil
- 3 tbsp white wine vinegar
- 1 tbsp Dijon mustard
- 2 apples, cored and cubed
- Handful of raisins
- Bunch of parsley, chopped
- Chopped walnuts
- Whisk the oil, vinegar and mustard together with some seasoning in a large bowl. Add the apples, parsley, cauliflower and raisins, and gently toss together. Toast the walnut pieces. Tip the salad into a serving bowl, scatter the walnuts over the top and serve.
