Cauliflower Steaks with Olive and Pepper Salsa

  • 1 cauliflower
  • ½ tsp smoked paprika
  • 2 tbsp quality olive oil
  • 1 roasted red pepper from a jar
  • 4 black olives
  • Small handful of parsley, chopped
  • 1 tsp drained capers
  • ½ tbsp red wine vinegar
  • 2 tbsp flaked almonds, lightly toasted
  • Preheat the oven to 220C and line a baking tray with parchment. Slice the cauliflower into a pair of 1-inch thick steaks, and rub with ½ tbsp of olive oil and the paprika. Season well, then roast for 20 mins.
  • Meanwhile, make your salsa. Chop the olives, pepper, capers, and stir in a bowl with the parsley. Mix with the remaining olive oil and vinegar, then season. Serve the salsa spooned over the cauliflower steaks, and scatter with flaked almonds.
