Cauliflower Waldorf Salad

  • 1 cauliflower, cut into florets and sliced
  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp honey mustard
  • 2 apples, cut into small cubes
  • Handful of plump raisins
  • Chopped parsley
  • Handful of halved walnuts
  • Pomegranate seeds
  • Whisk the olive oil, vinegar and honey mustard together with some seasoning in a bowl. Add the raisins, apples, parsley and cauliflower, and toss together to coat in the dressing.
  • Toast the walnut halves in a dry pan until nicely toasted. Chop into small pieces, then toss into the salad and mix together. Scatter with pomegranate seeds and serve.
