Cauliflower Waldorf Salad
- 1 cauliflower, cut into florets and sliced
- 3 tbsp olive oil
- 3 tbsp white wine vinegar
- 1 tbsp honey mustard
- 2 apples, cut into small cubes
- Handful of plump raisins
- Chopped parsley
- Handful of halved walnuts
- Pomegranate seeds
- Whisk the olive oil, vinegar and honey mustard together with some seasoning in a bowl. Add the raisins, apples, parsley and cauliflower, and toss together to coat in the dressing.
- Toast the walnut halves in a dry pan until nicely toasted. Chop into small pieces, then toss into the salad and mix together. Scatter with pomegranate seeds and serve.
