Cauliflower, Walnut and Apple Salad

  • 1 cauliflower, cut into florets and finely sliced
  • 3 tbsp olive oil
  • 3 tbsp white wine vinegar
  • 1 tbsp mustard
  • 2 apples, diced
  • Handful of sultanas
  • Chopped parsley
  • Handful of chopped walnuts
  • Add the olive oil, vinegar and mustard to a large bowl with some seasoning, and whisk to combine. Add the apples, sultanas, a good handful of chopped parsley and the cauliflower, and toss together to coat in the dressing.
  • Toast the walnut pieces in a dry pan for a couple of minutes, then tip into the salad and serve. Delicious!
