Chargrilled Zucchini and Bacon Pasta

  • 150g fusilli pasta
  • 2 zucchini, halved and sliced
  • 2.5 tbsp olive oil
  • 4 slices of smoked streaky bacon, chopped
  • 2 sliced garlic cloves
  • Pinch of chilli flakes
  • Cook the pasta in boiling salted water until al dente. Meanwhile, toss the zucchini in 1 tbsp of oil and some seasoning. Griddle until tender and char-lined on both sides, then set aside on a plate. Heat the remaining oil in a frying pan and fry the bacon until crisp and golden. Add the garlic, cook for 2 mins more and stir in the chilli flakes.
  • Drain the pasta, reserving a few splashes of cooking water. Tip the zucchini and pasta into the pan with the bacon bits - along with the cooking water - and toss everything together. Season well and serve.
