Chargrilled Zucchini/Courgette Salad
- 6 zucchini/courgettes, cut into long strips
- 2 tbsp olive oil
- 1 red chilli, deseeded and finely chopped
- Salt and pepper
- 1⁄2 lemon, juice only
- Handful of fresh mint and basil, chopped
- Toss the zucchini/courgettes strips in olive oil, chilli, salt and pepper, and then grill on a very hot griddle for about 4 minutes on each side. You want them tender but still with a bit of crunch, and featuring some nice char lines.
- Toss the griddled zucchini/courgettes in the lemon juice and herbs, along with another good slug of olive oil, and serve as a side or as a light lunch with a friend.
