Cheese-stuffed Pancakes with Bacon
- 10 smoked bacon rashers
- 300g self-raising flour
- 1 tsp baking powder
- Pinch of sugar
- 2 eggs, beaten
- 300ml milk
- 2 tbsp oil
- 25g butter
- 150g sliced brie
- 50g cheddar, grated
- Grill the bacon until crisp, then set aside and keep warm. Tip the flour, sugar, baking powder and a pinch of salt into a large bowl, then mix in the eggs and milk until you’ve made a smooth batter.
- Heat a small knob of butter with a splash of oil in a frying pan, and spoon 1 tbsp of batter and spread out into a 10cm circle. Top the circle with a slice of brie and a bit of grated cheddar, then cover with about 1.5 tbsp of batter to cover the cheese. Cook for 3 mins, then flip with a spatula and cook for 2 mins more. Repeat to make 10 pancakes, then serve with a knob of butter and the bacon. Yum!
