Cheesy Chicken Breast with Avo Salsa
- 1 chicken breast
- 30g grated Emmental
- Sprig of fresh thyme
- Salt and pepper
- 1 crushed garlic clove
- 1 tbsp olive oil
- For the Salsa
- ½ avocado
- ½ red chilli, chopped
- 1 lime, juice only
- Preheat the oven to 200C. Cut a pocket lengthways in the thickest part of the breast, and stuff with grated cheese and thyme. Season the meat well. Heat the olive oil in a frying pan and add the garlic. Fry for a minute, then add the chicken breast and fry until golden all over. Turn the breast over, and roast in the oven for 12 minutes.
- Make the salsa by finely chopping the avocado, and placing in a bowl with the chopped chilli and lime juice. Serve the chicken with a spoonful of the salsa, and a drizzle of olive oil. Delicious!
