Cheesy Chicken Breast with Avo Salsa

  • 1 chicken breast
  • 30g grated Emmental
  • Sprig of fresh thyme
  • Salt and pepper
  • 1 crushed garlic clove
  • 1 tbsp olive oil
  • For the Salsa
  • ½ avocado
  • ½ red chilli, chopped
  • 1 lime, juice only
  • Preheat the oven to 200C. Cut a pocket lengthways in the thickest part of the breast, and stuff with grated cheese and thyme. Season the meat well. Heat the olive oil in a frying pan and add the garlic. Fry for a minute, then add the chicken breast and fry until golden all over. Turn the breast over, and roast in the oven for 12 minutes.
  • Make the salsa by finely chopping the avocado, and placing in a bowl with the chopped chilli and lime juice. Serve the chicken with a spoonful of the salsa, and a drizzle of olive oil. Delicious!
