Chicken and Fresh Herb Salad

  • 1 roasted chicken breast, chopped
  • Handful of fresh sage
  • Handful of fresh coriander
  • Handful of fresh parsley
  • Handful of fresh dill
  • Handful of fresh mint
  • 2 tbsp homemade onion mayonnaise or shop-bought mayo
  • Salt and pepper
  • Squeeze of lemon
  • Simply mix the ingredients in a salad bowl, adding the roughly chopped herbs to the chicken breast along with the mayo, the seasoning, and the lemon juice. Serve with some warm crusty bread, and enjoy.
