Chicken, Apple and Peanut Salad
- 2 limes, juice only
- 60g chunky peanut butter
- 2 tbsp soy sauce
- 2 tbsp sesame oil
- ½ red cabbage, shredded
- ½ red onion, sliced
- 2 small apples, sliced
- 250g pouch of ready-to-eat mixed grains
- 4 chicken thighs, cooked and meat shredded
- 3 tbsp sesame seeds
- ½ bunch of fresh coriander, chopped
- Make the dressing by mixing the lime juice, soy sauce, peanut butter and sesame oil with 50ml of boiling water. Stir to combine.
- Toss the cabbage, apples, grains, chicken and onion in a bowl, mix to combine, then season to taste. Divide between four bowls and sprinkle with the coriander and sesame seeds, then drizzle with the dressing to serve.
