Chicken, Apple and Peanut Salad

  • 2 limes, juice only
  • 60g chunky peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp sesame oil
  • ½ red cabbage, shredded
  • ½ red onion, sliced
  • 2 small apples, sliced
  • 250g pouch of ready-to-eat mixed grains
  • 4 chicken thighs, cooked and meat shredded
  • 3 tbsp sesame seeds
  • ½ bunch of fresh coriander, chopped
  • Make the dressing by mixing the lime juice, soy sauce, peanut butter and sesame oil with 50ml of boiling water. Stir to combine.
  • Toss the cabbage, apples, grains, chicken and onion in a bowl, mix to combine, then season to taste. Divide between four bowls and sprinkle with the coriander and sesame seeds, then drizzle with the dressing to serve.
