Chicken Breast with Parmesan and Prosciutto
- 2 chicken breasts, skin removed
- 2 tbsp grated parmesan
- 2 slices of prosciutto
- Olive oil
- Rocket salad, to serve
- Gently pound the chicken breasts with a rolling pin until approximately 2cm thick. Season well, sprinkle with parmesan on one side and wrap with prosciutto.
- Heat a frying pan and add the olive oil. Sear the wrapped chicken breast for 4 mins on each side, or until cooked through. Serve with a rocket salad, and enjoy.
