Chicken Breast with Parmesan and Prosciutto

  • 2 chicken breasts, skin removed
  • 2 tbsp grated parmesan
  • 2 slices of prosciutto
  • Olive oil
  • Rocket salad, to serve
  • Gently pound the chicken breasts with a rolling pin until approximately 2cm thick. Season well, sprinkle with parmesan on one side and wrap with prosciutto.
  • Heat a frying pan and add the olive oil. Sear the wrapped chicken breast for 4 mins on each side, or until cooked through. Serve with a rocket salad, and enjoy.
