Chicken Kofta

  • 1 tbsp olive oil
  • 1 diced red onion
  • 1 chopped garlic clove
  • 1 chopped red chilli
  • 500g chicken mince
  • 1 tbsp baharat spice mix
  • 50g fresh white breadcrumbs
  • 1 beaten egg
  • Chopped coriander
  • Salad, to serve
  • Cook the onion in the oil for 4 mins to soften, then stir in the garlic and chilli and cook for a minute more. Season well and set aside. Mix the mince in a bowl with the remaining ingredients, then add to the onion mixture and form with damp hands into 12 kofta oval balls.
  • Preheat your grill to a medium setting. Cook the koftas for 10 mins on each side, or until cooked through, golden and crisp. Serve with salad.
