Chicken Stuffed with Mustard Mozzarella

  • 125g mozzarella ball, torn into small pieces
  • 50g grated cheddar
  • 1 tbsp wholegrain mustard
  • 4 chicken breasts, skin and bones removed
  • 8 smoked American-style bacon rashers
  • Preheat the oven to 200C. Mix together the mustard and cheeses, and cut a slit into the side of each chicken breast to stuff with the mixture.
  • Wrap the stuffed breasts with a pair of bacon rashers - don’t do it too tightly, but tightly enough to hold it all together. Season liberally with salt and pepper, and roast for 20-25 mins. Serve with steamed greens or buttery mashed potatoes.
