Chicken Waldorf Salad

  • 2 red apples, sliced
  • ½ lemon, juice only
  • 1 tsp runny honey
  • 150g grapes, halved
  • 2 sliced celery stalks
  • 4 sliced spring onions
  • 1 little Gem lettuce, leaves separated
  • 300g cooked chicken breast, chopped
  • 2 tbsp walnut pieces
  • 4 sprigs of dill, to garnish
  • For the Dressing
  • 200g yoghurt
  • 1 crushed garlic clove
  • 1 tbsp white wine vinegar
  • 1 tbsp wholegrain mustard
  • 3 tbsp chopped dill
  • Toss the apples in a salad bowl with the lemon juice and honey. Stir in the grapes, celery, spring onion, chicken, and lettuce, and toss well.
  • Make the dressing by whisking together the yoghurt, vinegar, mustard, garlic and dill. Season well, and spoon over the salad and toss. Scatter with the walnut pieces, garnish with more dill, and serve.
