Chicken with Pine Nut Crust

  • 55g pine nuts
  • 1⁄2 large chicken breast
  • 25g butter
  • 1 tbsp olive oil
  • Creamed leeks, to serve
  • Put the pine nuts in a food processor and blend to a powder. Press this powder into one side of the chicken breast. Heat up the butter and olive oil over a medium heat, then fry the chicken for 5 minutes on each side, or until cooked and golden. Serve with creamed leeks or veggies in a cream sauce.
