Chicken with Wine and Chorizo

  • 1 tsp chilli powder
  • 2 tsp smoked paprika
  • 1 chicken thigh fillet, bone removed
  • 2 tbsp olive oil
  • ½ sliced onion
  • 2 chopped garlic cloves
  • ½ chopped chorizo sausage
  • 100ml red wine
  • 50g fava beans, skins removed
  • 1 tbsp chopped chives
  • Chopped parsley, to finish
  • Preheat the oven to 180C. Mix the paprika, chilli and some salt and pepper in a bowl, and open out the chicken thigh fillet so it’s flat. Roll in the spice mix, then fry in 1 tbsp of olive oil until browned all over. Transfer the chicken to the oven and roast for 10 mins to cook through.
  • Meanwhile, fry the onion and garlic to soften in a little oil. Add the chorizo and gently fry to slightly crisp, then add the wine and simmer for 5 mins to reduce. Add the beans, mix well, then serve alongside the cooked chicken thigh with some chives and parsley to finish.
