Chilli and Basil Linguine
- For the Basil Paste
- Handful of fresh basil
- 1 tbsp olive oil
- Salt and pepper
- For the Linguine
- 1 tbsp olive oil
- 1 chopped red chilli
- 2 chopped garlic cloves
- 1⁄2 lemon, juice only
- Small handful of chopped basil
- 200g cooked linguine
- Make the basil paste by adding the ingredients to a food processor and blitzing until smooth. Heat the oil in a pan, and gently fry the chilli and garlic for a couple of minutes, before adding the lemon juice, chopped basil, and cooked linguine. Stir well, and serve with a big dollop of the basil paste on top.
