Chilli and Basil Linguine

  • For the Basil Paste
  • Handful of fresh basil
  • 1 tbsp olive oil
  • Salt and pepper
  • For the Linguine
  • 1 tbsp olive oil
  • 1 chopped red chilli
  • 2 chopped garlic cloves
  • 1⁄2 lemon, juice only
  • Small handful of chopped basil
  • 200g cooked linguine
  • Make the basil paste by adding the ingredients to a food processor and blitzing until smooth. Heat the oil in a pan, and gently fry the chilli and garlic for a couple of minutes, before adding the lemon juice, chopped basil, and cooked linguine. Stir well, and serve with a big dollop of the basil paste on top.
