Chilli and Lime Prawn Salad
- 100g Greek yoghurt
- 30g ketchup
- 1 tsp hot sauce
- 1 lime
- 100g salad leaves
- 2 sliced avocados
- 1 cucumber, peeled into ribbons
- Small glug of olive oil
- 1 sliced garlic clove
- 1 sliced red chilli
- 350g raw peeled king prawns
- Chopped basil
- Mix the yoghurt, ketchup, hot sauce and a squeeze of lime in a small bowl and season well. Add a splash of water and mix to make a spoonable dressing, then set aside. Toss together the leaves, avocado and cucumber in a salad bowl.x
- Heat some oil in a pan and add the chilli and garlic. Fry for 2 mins, then toss in the prawns. Fry for 4 mins, or until cooked through, then tip into the salad with another squeeze of lime, the chopped basil, and the dressing spooned all over and tossed through. Delicious.
