Chilli and Lime Prawns with Mango Dressing
- 1 tbsp mango chutney
- 1 tbsp white wine vinegar
- 1 lime, ½ juiced, ½ cut into wedges
- 2 tbsp olive oil
- ½ red chilli, diced
- 1 mango
- ¼ red onion
- 2 mint sprigs, chopped
- 150g large prawns, shelled and cleaned
- Rice, to serve
- Whisk together the chutney, vinegar, lime juice, chilli, olive oil and some seasoning in a small bowl, then set aside. Make the salsa by dicing the onion and mango into 0.5cm pieces, then stir in a bowl with the chopped mint and 2 tbsp of the mango chutney vinaigrette. Stir well and set aside.
- Pour the remaining vinaigrette into a frying pan and bubble for a minute, then add the prawns and stir-fry for 90 seconds, tossing as they cook, until pink and piping hot. Remove and serve with a heap of basmati rice, a good drizzle of the glaze from the pan, and a spoonful of the mango salsa on top. Delicious!
