Chilli Prawn Tacos
- 200g raw king prawns, peeled
- 1 chopped red chilli
- 1 lime, juice only
- 1 crushed garlic clove
- 1 sliced avocado
- Handful of baby tomatoes, quartered
- ½ red onion, chopped
- ¼ salad lettuce, shredded
- 4 soft tortillas
- Sour cream, to serve
- Simply mix the prawns with half the lime juice and garlic and half the chilli, and leave to marinate for 10 mins in a bowl. Put the remaining chilli, lime, tomatoes, onion and avocados in a bowl and set aside.
- Griddle the prawns for 2 mins on each side or until pink. Pile them into tortillas with the lettuce and your chilli and tomato mix, add a dollop of sour cream and eat immediately.
