Chilli Prawn Tacos

  • 200g raw king prawns, peeled
  • 1 chopped red chilli
  • 1 lime, juice only
  • 1 crushed garlic clove
  • 1 sliced avocado
  • Handful of baby tomatoes, quartered
  • ½ red onion, chopped
  • ¼ salad lettuce, shredded
  • 4 soft tortillas
  • Sour cream, to serve
  • Simply mix the prawns with half the lime juice and garlic and half the chilli, and leave to marinate for 10 mins in a bowl. Put the remaining chilli, lime, tomatoes, onion and avocados in a bowl and set aside.
  • Griddle the prawns for 2 mins on each side or until pink. Pile them into tortillas with the lettuce and your chilli and tomato mix, add a dollop of sour cream and eat immediately.
